Ingredients:
1 package Wellness Forum Health Couscous Pilaf prepared according to package
1 package Wellness Forum “Sausage” Mix, prepared according to package instructions
2 15-ounce jars tomato sauce
8 green bell peppers
Directions:
Preheat oven to 375 degrees.
- In a large bowl, combine the prepared couscous pilaf and “sausage,” and 1/2 jar of tomato sauce. Mix Well and set aside.
- Cut the tops from the green peppers and discard the seeds and ribs. Steam the peppers, cut side down, on a rack in a pot with one inch of boiling water, covered for 10 minutes. Rinse in ice water to retain the color of the peppers.
- Arrange the peppers, cut side up, in a non-stick baking dish just large enough to hold them. Sprinkle with salt and pepper and fill with the couscous mixture. Pour remaining tomato sauce over peppers
- Bake for 20 minutes.
