Curried Potato Soup

Serves 4

1 large yellow onion, diced
1 large carrot, diced
3 cloves garlic, minced
1 1/2 tablespoons curry powder
2 large potatoes, diced small
6 cups water
1 Wellness Forum Large Potato Soup Mix
One 10-ounce bag frozen peas
Chopped cilantro for garnish


  • Saute the onion and carrot in a large saucepan over medium heat for 8 minutes. Add water 1 to 2 tablespoons at a time to keep the vegetables from sticking. Add the garlic and curry powder and cook another minute.
  • Add the potatoes and 6 cups of water and cook, covered until the potatoes are tender, about 15 minutes.
  • When the potatoes are tender, add the Wellness Forum Large Potato Soup Mix and the frozen peas. Cook 5 minutes until heated through. Serve garnished with the chopped cilantro.
