Re-”Fried” Beans Burritos

Serves 4

1 recipe Wellness Forum Health Re-”Fried”
4 large whole wheat flour tortillas
1 jar salsa
chopped lettuce
brown rice
1 cup Southwest Dressing, (recipe below)


  • Prepare the refried beans according to package instructions.
  • While the beans cook, heat the tortillas in a large skillet over medium heat to soften them.
  • To assemble the burritos; lay a flour tortilla flat on a plate. Spread some of the refried beans on top of the tortilla, followed by some of the brown rice, the lettuce, salsa and the Southwest Dressing.
  • Roll up and serve.


Southwest Dressing

1 package silken tofu
Zest and juice from 3 limes, or 6 tablespoons bottled lime juice
4 cloves garlic
1 teaspoon sea salt
1 Tablespoon toasted, ground cumin
2 teaspoons ancho chile powder
1/4 cup fresh, chopped cilantro


  • Combine all ingredients in a blender and puree until smooth and creamy.
  • Makes 1 3/4cups.
