White Bean Quinoa Pilaf

Serves 4

4 cup water
4 tablespoons Wellness Forum Health Certainly Not Chicken Broth Powder
2 cups quinoa
1 large yellow onion, diced
1 large carrot, diced
1 large stalk celery, diced
2 cloves garlic, minced
2 teaspoons dried sage
Sea salt and black pepper to taste
One 15-ouince can cannelloni beans, drained


  • Add the broth powder and 4 cups of water to a 2 quart sauce pan and bring it to a boil. Add the quinoa, cover with a tight fitting lid, and cook for 15 minutes over medium heat.
  • While the quinoa cooks, saute the onion, carrot and celery in a large pan for 8 minutes. Add water 1 to 2 tablespoons at a time to keep the vegetables from sticking. Add the garlic and sage and cook another minute. Add the beans.
  • When the quinoa is finished cooking, add it to the sauteed vegetable mixture and cook just until heated through. Season with salt and black pepper.
